Hello my dear ones. How are you? Well, autumn is here. Days are being cooler and shorter. Maybe you will not believe it but I like autumn, actually I like all seasons. Autumn always reminds me of one good recipe I am about to share with you. Pumpkin, the queen of autumn is also the favorite meal in my family. Nutritionists recommend us to eat pumpkin as one very healthy dish and they say that it is the golden gift that nature has to offer us. In my country, we have a lot of it even if we do not use it very often. I am a vegetarian, but in one period of my life I was a vegan qnd it is when I started to eat stuffed pumpkin.
Recipe:
Cut the pumpkin in half and clean it from the seeds. Put in the pumpkin virgin coconut Oil and sea salt. Take all vegetables you have in the house, cut them and fry them in a pan with coconut oil. I used onions, leek, carrots, squash, peppers and eggplant. It is important to use a lot of different vegetables except garlic. You can use garlic with olive oil and parsley as a sauce. In the fried vegetables add some quick cooked integral rice. Stuff both halves of the pumpkin and cook them at 200 Celsius degrees for 2 hours.
